  • 10 Fuyu persimmons
  • Honey (for drizzling)

Instructions

  1. In a food processor, combine flour, ground almonds, powdered sugar, and salt. Add cold butter and pulse until crumbly. Mix in egg yolk to form dough. Press into a tart pan.
  2. Chill the dough covered for about 30 minutes.
  3. For the filling, beat softened butter with powdered sugar until creamy. Add egg and mix well. Stir in ground almonds, flour, salt, and almond extract until combined.
  4. Preheat oven to 350°F (175°C). Spread filling over chilled crust and arrange thinly sliced persimmons on top.
  5. Bake for approximately 45 minutes until golden brown and set. Cool slightly before drizzling with honey.
