  • 1 can chipotle peppers in adobo sauce (7 oz)
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a mixing bowl, combine chipotle peppers, olive oil, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander (if using), smoked paprika, salt, and pepper. Whisk until smooth.
  2. Place chicken in a resealable bag or shallow dish; pour marinade over it and refrigerate for at least 30 minutes (up to overnight).
  3. Heat a cast iron skillet or grill pan over medium-high heat. Remove chicken from marinade and cook each piece for about 5-7 minutes per side until cooked through (internal temperature should reach 165°F).
