  • 1 1/2 tbsp. olive oil
  • 4 garlic cloves, minced
  • 1/2 tbsp. taco seasoning
  • 1/2 tbsp. oregano
  • 1/2 tsp. salt
  • 1/3 tsp. pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the potatoes, then combine them in a mixing bowl with olive oil, taco seasoning, oregano, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet and roast for 15 minutes.
  4. In the same bowl (no need to wash), add green beans, olive oil, minced garlic, and salt; stir to combine.
  5. After the initial roasting time, add the green beans to the baking sheet with potatoes and mix gently.
  6. Roast for an additional 20-30 minutes until everything is tender.
