  • 2 cups mixed bell peppers (sliced)
  • 3 cloves fresh garlic (minced)
  • 2 tsp olive oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving (about 2 cups)

Instructions

  1. Preheat a large skillet over medium-high heat. Add olive oil once hot.
