  • 1/2 cup chickpeas
  • 1/2 avocado
  • 1/2 cup cherry tomatoes
  • 1/2 cucumber
  • 2 tbsp red onion
  • Fresh herbs (parsley or cilantro)
  • Chili powder or smoked paprika
  • Olive oil or lemon juice (optional)

Instructions

  1. Boil water in a pot and add eggs; cook for 9 minutes for hard-boiled perfection. Cool in cold water, peel, and halve.
  2. While the eggs boil, prepare the vegetables: slice the avocado and cherry tomatoes, dice the cucumber, finely chop the red onion, and rinse canned chickpeas.
  3. In a mixing bowl or plate, layer chickpeas at the base, followed by avocado, tomatoes, cucumber, red onion, and top with halved eggs.
  4. Season with chili powder, salt, pepper, and garnish with herbs. Drizzle with olive oil or lemon juice if desired.
