Ingredients
- 2 egg yolks
- 2 1/2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 cup mascarpone cheese
- 2/3 cup heavy cream
- 5–6 ladyfingers
- 1/4 cup cold-brewed coffee
- 1 1/4 cups fresh raspberries
- Cocoa powder (for dusting)
Instructions
- In a heatproof bowl, whisk together egg yolks and sugar until pale yellow. Place over simmering water and cook while whisking constantly for about 5-7 minutes until thickened. Let cool slightly.
- Stir in vanilla extract and mix in mascarpone until smooth. In another bowl, beat heavy cream until stiff peaks form and fold into the mascarpone mixture carefully.
- Brush ladyfingers with cold-brewed coffee and cut them into pieces. Layer them in serving glasses with mascarpone mixture and fresh raspberries, repeating layers and finishing with mascarpone on top. Dust with cocoa powder and refrigerate for at least one hour before serving.
