Ingredients
- 3 cups finely chopped red bell pepper
- 1 cup finely chopped green bell pepper
- 1/4 cup finely chopped jalapeño pepper
- 1 cup apple cider vinegar
- 5 cups white sugar
- 1 1/2 packages SURE-JELL powder pectin
Instructions
- Sterilize six 8-ounce canning jars and lids according to the manufacturer’s instructions and heat water in a hot water canner.
- In a large saucepan over high heat, combine red, green, and jalapeño peppers with apple cider vinegar and SURE-JELL. Stir constantly until it reaches a rolling boil.
- Quickly add sugar, return to a rolling boil for 2-3 minutes, then remove from heat and skim off foam.
- Ladle the mixture into sterilized jars, filling to within 1/4 inch of the top. Seal with lids and bands.
- Process jars in the boiling water canner for five minutes before removing to cool completely.
