Ingredients
- 3 cups finely chopped red bell pepper
- 1 cup finely chopped green bell pepper
- 1/4 cup finely chopped jalapeño pepper
- 1 cup apple cider vinegar
- 5 cups white sugar
- 1 1/2 packages SURE-JELL powder pectin
Instructions
- Sterilize six 8-ounce canning jars and lids as per the manufacturer’s instructions.
- In a large saucepan, combine red bell peppers, green bell peppers, jalapeño pepper, and apple cider vinegar. Stir in the SURE-JELL pectin and bring to a rolling boil while stirring constantly.
- Quickly add sugar and return to a boil for 2-3 minutes. Remove from heat and skim off foam.
- Ladle jelly into jars up to 1/4 inch from the top. Seal with lids and screw on bands tightly.
- Process jars in a hot water canner for five minutes, then cool completely before serving.
