  • 12 jumbo pasta shells
  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz cream cheese, softened
  • 1 cup low-sodium beef broth
  • 1 cup full-fat sour cream
  • 1.5 cups shredded mozzarella and cheddar cheese blend
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. Cook the pasta shells in salted boiling water until al dente (8-10 minutes). Drain carefully.
  3. In a skillet over medium heat, sauté onions until translucent. Add garlic, then ground beef. Cook until browned; drain excess fat.
  4. Stir in cream cheese until melted. Season with salt and pepper, then mix in half of the shredded cheese.
  5. Stuff each shell with the beef mixture and place seam-side up in the baking dish. Pour beef broth mixed with sour cream over the shells and top with remaining cheese.
  6. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 5 minutes until bubbly.
