Ingredients

  • 3 lb bone-in lamb shoulder
  • Salt & freshly ground black pepper
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 8 cloves whole garlic, peeled

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the lamb shoulder generously with salt and pepper.
  3. In a bowl, mix honey, soy sauce, and minced garlic to create the glaze.
  4. Place the seasoned lamb in a roasting pan and brush half of the glaze on top. Scatter whole garlic cloves around the pan.
  5. Cover with foil and roast for 2-2.5 hours, basting every 30 minutes; uncover during the last 30 minutes to brown.
  6. Check doneness with a meat thermometer (145°F for medium-rare).
  7. Let rest for 15 minutes before carving.
