- 4 large Yukon Gold potatoes
- 3 tablespoons olive oil

- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon smoked paprika

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and slice the Yukon Gold potatoes into even 1/4-inch rounds. Pat them dry.
- In a saucepan over low heat, combine melted butter, olive oil, and minced garlic; sauté for 1–2 minutes until fragrant. Whisk in heavy cream and Parmesan cheese until smooth; add thyme, smoked paprika, salt, and pepper. Simmer gently for 2 minutes.
- Line a rimmed baking sheet with parchment paper. Assemble the stacks by layering three potato rounds per layer and spooning a thin layer of the creamy mixture between each layer. Brush the top layer with extra glaze.
