  • 2 large chicken breasts
  • 1 (10-ounce) can Ro-tel diced tomatoes & green chilies
  • 1 (14-ounce) can black beans
  • 1 (12-ounce) can corn
  • 1 cup Mexican cheese blend
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt & pepper (to taste)
  • 2 tablespoons olive oil
  • 1/2 medium onion (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken breasts into thinner cutlets and season with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat; sear chicken until golden brown (3-4 minutes per side). Remove from skillet.
  4. Sauté chopped onion in the same skillet until softened (about 5 minutes).
  5. Add drained Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
  6. Return chicken to skillet and top with the mixture and cheese.
  7. Bake in preheated oven for 5-7 minutes until chicken reaches 165°F (75°C).
