Ingredients
- 2 pounds beef (chuck or brisket)
- 3 tablespoons olive oil
- 16 ounces small pearl onions
- 4 cloves garlic
- 1 cup red apple vinegar
- 28 ounces crushed tomatoes
- 1 stick cinnamon (optional)
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a heavy-bottomed pot over medium-high heat. Cut the beef into chunks, season with salt and pepper, and brown in batches for about 5 minutes per side. Remove and set aside.
- In the same pot, sauté pearl onions until golden brown, then add minced garlic and cook for another minute.
- Deglaze the pot with red apple vinegar, scraping any browned bits from the bottom.
- Return the beef to the pot, adding crushed tomatoes, cinnamon stick (if using), bay leaves, oregano, honey, salt, and pepper. Stir well.
- Cover and reduce heat to low; simmer gently for about 120 minutes or until beef is tender.
- Before serving, remove bay leaves and cinnamon stick. Garnish with fresh parsley.
