  • 2 pounds beef (chuck or brisket)
  • 3 tablespoons olive oil
  • 16 ounces small pearl onions
  • 4 cloves garlic
  • 1 cup red apple vinegar
  • 28 ounces crushed tomatoes
  • 1 stick cinnamon (optional)
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Cut the beef into chunks, season with salt and pepper, and brown in batches for about 5 minutes per side. Remove and set aside.
  2. In the same pot, sauté pearl onions until golden brown, then add minced garlic and cook for another minute.
  3. Deglaze the pot with red apple vinegar, scraping any browned bits from the bottom.
  4. Return the beef to the pot, adding crushed tomatoes, cinnamon stick (if using), bay leaves, oregano, honey, salt, and pepper. Stir well.
  5. Cover and reduce heat to low; simmer gently for about 120 minutes or until beef is tender.
  6. Before serving, remove bay leaves and cinnamon stick. Garnish with fresh parsley.
