  • 2 tbsp lemon juice
  • 3 garlic cloves (minced)
  • 1 tbsp Greek seasoning
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 small red onion (sliced)
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives
  • Optional: Feta cheese for serving

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, Greek seasoning, and red apple vinegar for the marinade.
  2. Coat chicken in marinade and let it sit while preparing vegetables.
  3. Preheat oven to 400°F (200°C).
  4. Toss sliced peppers, zucchini, onion, cherry tomatoes, olives with olive oil, oregano, salt, and pepper on a baking sheet.
  5. Place marinated chicken on top of veggies.
