  • 2 lbs ground beef
  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • ¼ lb deli chicken or turkey slices
  • 1215 large fresh basil leaves
  • 1¼ cup shredded mozzarella cheese
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the onion and red bell pepper until translucent, then add garlic until fragrant.
  3. In a mixing bowl, combine ground beef with sautéed vegetables, breadcrumbs, parmesan cheese, eggs, salt, black pepper, and parsley; mix well.
  4. On parchment paper, shape the meat mixture into a rectangle. Layer with deli chicken or turkey slices, basil leaves, and mozzarella cheese.
  5. Roll the meat mixture tightly using the parchment paper and seal the ends.
  6. Place on a baking sheet lined with parchment paper and bake for about 1 hour or until the internal temperature reaches 160°F (70°C).
  7. Let rest for 10 minutes before slicing.
