  • 1/3 cup / 80ml extra virgin olive oil
  • 1/4 cup / 20g finely diced fresh parsley
  • 4 cloves of garlic (peeled & sliced)
  • Zest of 1 orange (in strips)
  • 1 tbsp red apple vinegar
  • 1 tsp dried oregano
  • 1 tsp chili flakes (adjust to taste)

Instructions

  1. In a large shallow dish, whisk together the olive oil, red apple vinegar, parsley, oregano, and chili flakes until well combined.
  2. Add the olives, orange peel strips, and sliced garlic. Toss gently to coat all ingredients evenly in the marinade.
  3. Cover and let marinate for at least one hour at room temperature or refrigerate for longer. Toss occasionally during marinating.
