  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 can (14 oz) coconut milk
  • Salt and freshly ground pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a large skillet, heat the oil over medium heat. Sauté the chopped onion until translucent. Add garlic and ginger; cook until fragrant.
  2. Transfer the sautéed mixture to a slow cooker. Add curry paste, coconut milk, salt, and pepper; stir well.
  3. Add cubed beef to the slow cooker and gently coat with the sauce. Cover and cook on low for 6-8 hours or high for 4 hours until tender.
  4. Prepare garlic naan while the curry cooks by brushing it with melted butter mixed with minced garlic before baking until golden.
  5. Serve hot garnished with fresh cilantro alongside warm naan.
