Ingredients
- 2 lbs beef chuck, cut into 1.5-inch cubes
- 1 cup beef broth
- 1 can (13.5 oz) full-fat coconut milk
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp red curry paste
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp paprika
- 1/2 tsp chili flakes (optional)
- Salt and pepper to taste
- 1 tbsp brown sugar
- 2 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- Prep all ingredients: chop onion, mince garlic, grate ginger, and cube beef.
- Combine beef, salt, pepper, brown sugar, chili flakes (if using), beef broth, and coconut milk in a slow cooker.
- Add onions, garlic, ginger, red curry paste, curry powder, turmeric, and paprika.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
