  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 1 cup beef broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp red curry paste
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper to taste
  • 1 tbsp brown sugar
  • 2 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. Prep all ingredients: chop onion, mince garlic, grate ginger, and cube beef.
  2. Combine beef, salt, pepper, brown sugar, chili flakes (if using), beef broth, and coconut milk in a slow cooker.
  3. Add onions, garlic, ginger, red curry paste, curry powder, turmeric, and paprika.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  5. Stir in lime juice before serving. Serve over rice or with warm garlic naan and garnish with fresh cilantro.
