  • 2 pounds boneless skinless chicken breast or thighs, or beef shoulder/butt
  • 1/2 cup pineapple juice
  • 1/2 cup low sodium soy sauce
  • 1/3 cup honey
  • 2 tablespoons rice vinegar
  • 6 cloves garlic, finely chopped
  • 2 cups fresh pineapple chunks
  • 3 cups shredded cabbage
  • warm tortillas or crunchy Asian noodles

Instructions

  1. In a mixing bowl, combine pineapple juice, soy sauce, honey, rice vinegar, ketchup, garlic, ginger, and sambal oelek.
  2. Place chicken in the slow cooker and pour marinade over it. Ensure chicken is well coated.
  3. Cover and cook on low for about 4 hours until tender.
  4. Shred the chicken with forks and return it to the slow cooker. Add fresh pineapple chunks and Gochujang; mix well.
  5. Serve on warmed tortillas or over Asian noodles topped with shredded cabbage, Greek yogurt (or alternative), lime juice, cilantro, jalapeño slices, and toasted sesame seeds.
