  • 1 medium onion, diced
  • 4 cups cooked pinto beans (or 2 cans, drained)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Salt to taste
  • ¼ cup fresh cilantro, chopped (optional)

Instructions

  1. In a skillet over medium heat, brown the ground beef with diced onion until fully cooked. Drain excess fat.
  2. Transfer the beef and onion mixture to the slow cooker. Stir in pinto beans, diced tomatoes with green chilies, diced green chiles, and beef broth.
  3. Season to taste with chili powder, cumin, smoked paprika, garlic powder, black pepper, and salt.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, stir in fresh cilantro if desired.
