  • 1 (4.5 lb) lamb shoulder, bone-in
  • 6 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp ground black pepper
  • 2 tsp sea salt

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Pat the lamb shoulder dry and place it in a roasting pan.
  3. In a bowl, mix garlic, Dijon mustard, whole grain mustard, and honey until smooth.
  4. Rub rosemary, thyme, sea salt, and black pepper over the lamb evenly.
  5. Apply half of the glaze mixture on the lamb using a basting brush.
  6. Cover with foil and roast for about 4 hours; remove foil during the last hour while basting occasionally with remaining glaze.
  7. Use a meat thermometer to ensure the internal temperature reaches at least 145°F (63°C).
  8. Let the lamb rest for 15-20 minutes before slicing to serve warm.
