  • 3.4 lb bone-in lamb shoulder
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • Salt and black pepper to taste
  • 1 cup chicken broth or dry white grape juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, blend olive oil, minced garlic, rosemary, thyme, salt, and black pepper. Rub the mixture all over the lamb shoulder.
  3. Place the seasoned lamb in a roasting pan and pour grape juice or chicken broth into the pan.

  5. In a separate pan, caramelize grapes in olive oil over medium heat for about 10 minutes until softened.
