  • 1/4 cup molasses
  • 1 egg
  • 21/3 cups gluten-free baking flour blend
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 11/2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and 1 cup of sugar until light and fluffy. Mix in applesauce, apple cider, molasses, egg, and vanilla until well combined.
  3. In another bowl, whisk together gluten-free flour blend, baking soda, cinnamon, ground ginger, ground cloves, and salt.
  4. Gradually combine dry ingredients with wet ingredients until just mixed. Refrigerate dough for at least 2 hours.
