- 1 – 1½ lbs Spinach
- 1 medium Onion (chopped)
- 2 large Garlic cloves (minced)
- ½ cup Goat cheese (cream or feta)
- 1½ cup Feta cheese
- ½ cup Cheddar cheese (grated)
- 16 sheets Filo pastry
- ½ cup Olive oil
- ½ tsp Kosher salt
- ½ tsp Black pepper powder
- 1 tbsp Lemon juice
- 1 large Egg
- 1 cup Parsley
- ½ cup Pine nuts (toasted)
- ⅛ tsp pinch of nutmeg
Instructions
- Preheat your oven to 375°F (190°C). Ensure any frozen spinach is thawed and drained.
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion and minced garlic until translucent.
- Add spinach and cook until wilted, seasoning with salt, pepper, and lemon juice; allow liquid to evaporate.
- In a mixing bowl, combine the cooled spinach mixture with crumbled cheeses, beaten egg, parsley, nutmeg, salt, pepper, and toasted pine nuts.
- Brush a baking dish with olive oil and layer two sheets of filo pastry on the work surface; brush with oil. Spread about four tablespoons of filling on top while leaving a border.
- Roll the pastry tightly into a tube and coil it into the prepared baking dish.
- Repeat this process until all filling and pastry are used, tucking excess pastry around edges neatly.
- Brush the top with olive oil and bake for approximately 25–30 minutes until golden brown.
