Ingredients

Scale
  • 1 salmon fillet
  • 1012 baby potatoes
  • 23 large eggs
  • 1 ripe avocado
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tbsp fresh dill (or parsley), chopped
  • Salt & pepper to taste

Instructions

  1. Boil baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, chopped herbs, salt, and pepper.
  2. For the eggs: boil them for 7 minutes for jammy yolks or 9 minutes for fully set yolks. Transfer to ice water to cool before peeling.
  3. Season the salmon fillet with spices. Heat olive oil in a skillet over medium-high heat and sear the salmon for about 4-5 minutes on each side until golden brown.
  4. Serve by arranging the cooked potatoes, sliced eggs, seared salmon, and avocado on a plate. Sprinkle a pinch of salt over the avocado.
