Ingredients
- 1 salmon fillet
- 10–12 baby potatoes
- 2–3 large eggs
- 1 ripe avocado
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tbsp butter
- 1 garlic clove, minced
- 1 tbsp fresh dill (or parsley), chopped
- Salt & pepper to taste
Instructions
- Boil baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, chopped herbs, salt, and pepper.
- For the eggs: boil them for 7 minutes for jammy yolks or 9 minutes for fully set yolks. Transfer to ice water to cool before peeling.
- Season the salmon fillet with spices. Heat olive oil in a skillet over medium-high heat and sear the salmon for about 4-5 minutes on each side until golden brown.
- Serve by arranging the cooked potatoes, sliced eggs, seared salmon, and avocado on a plate. Sprinkle a pinch of salt over the avocado.
