- 150 g granulated sugar
- 50 g brown sugar
- 1 egg
- 80 g molasses
- 4 tsp grated orange zest
- 12 g grated gingerroot
- 240 g all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp salt
- 55 g crystallized ginger, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a stand mixer, cream together the butter, granulated sugar, and brown sugar until fluffy. Add the egg, mixing well.
- Gradually incorporate the molasses, orange zest, and gingerroot until combined.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and cloves. Gradually add this to the wet mixture until well blended.
- Chill the dough in the refrigerator for about 30 minutes.
