Ingredients
- 1 kg chicken pieces (bone-in or boneless)
- 4 tablespoons olive oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 2 red bell peppers, chopped
- 2 tablespoons smoked paprika
- 1 tablespoon cayenne pepper (adjust to taste)
- 1 tablespoon sweet paprika
- 2 tablespoons white apple vinegar
- 1 cup chopped tomatoes (fresh or canned)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken pieces and brown on all sides for about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté onion and garlic until soft and translucent, around 3-4 minutes.
- Add red bell peppers and cook for another 3 minutes until slightly softened.
- Stir in smoked paprika, cayenne pepper, sweet paprika, cumin, and dried oregano; cook for 1 minute.
- Add tomato paste, chopped tomatoes, and white apple vinegar; stir well and let simmer for about 5 minutes.
- Return browned chicken to the pan; coat with sauce. Cover and simmer on low heat for 25-30 minutes until chicken is cooked through.
- Season with salt and black pepper to taste. Garnish with fresh parsley before serving.
