Ingredients
- 1.1 pounds russet potato, peeled and cut into 1-inch pieces
- ½ teaspoon salt
- 1½ cup potato starch
- ½ cup warm water
- 2 tablespoons soy sauce
- 2 tablespoons Chinese black vinegar
- 2 tablespoons gochugaru
- 3 tablespoons neutral oil, like avocado or sunflower oil
- ⅓ cup cilantro, roughly chopped
Instructions
- 1. Boil potatoes in a large pot until fork-tender (10-15 minutes). Drain and mash until smooth.
- 2. Mix in salt and potato starch while still warm; knead gently until combined.
- 3. Gradually add warm water to form a smooth dough.
- 4. Divide dough into small pieces and roll each into thick noodles.
- 5. Boil noodles until they float (about 1 minute), then cool in cold water.
- 6. Prepare chili oil by heating oil and mixing it with soy sauce, vinegar, gochugaru, sugar, garlic, and salt in a bowl.
- 7. Toss cooled noodles with the chili oil and garnish with chopped cilantro.
