  • 1.1 pounds russet potato, peeled and cut into 1-inch pieces
  • ½ teaspoon salt
  • 1½ cup potato starch
  • ½ cup warm water
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar
  • 2 tablespoons gochugaru
  • 3 tablespoons neutral oil, like avocado or sunflower oil
  • ⅓ cup cilantro, roughly chopped

Instructions

  1. 1. Boil potatoes in a large pot until fork-tender (10-15 minutes). Drain and mash until smooth.
  2. 2. Mix in salt and potato starch while still warm; knead gently until combined.
  3. 3. Gradually add warm water to form a smooth dough.
  4. 4. Divide dough into small pieces and roll each into thick noodles.
  5. 5. Boil noodles until they float (about 1 minute), then cool in cold water.
  6. 6. Prepare chili oil by heating oil and mixing it with soy sauce, vinegar, gochugaru, sugar, garlic, and salt in a bowl.
