  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 tablespoon tomato paste
  • 1 (14 oz) can diced tomatoes
  • ½ cup beef stock
  • Lemon juice to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ¼ teaspoon cayenne pepper (adjust to taste)
  • ½ teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in minced garlic and grated ginger; cook for about 2 minutes until fragrant.
  3. Add Madras curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for an additional minute.
  4. Introduce the beef cubes to the pot and brown on all sides.
  5. Mix in tomato paste, diced tomatoes, beef stock, salt, and black pepper; bring to a gentle boil.
  6. Reduce heat to low, cover, and simmer for about 1.5 hours until beef is tender.
  7. Stir in lemon juice before serving.
