  • 1/4 cup dark brown sugar
  • 3 eggs, at room temperature
  • 1 tsp espresso powder (optional)
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 package candy eyes
  • 20 oz semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil
  • 1 cup powdered sugar
  • 23 tbsp heavy cream, to thin

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9 x 9 inch cake pan with parchment paper.
  2. Melt butter and dark chocolate chips together in a microwave-safe bowl until smooth.
  3. In a stand mixer, beat eggs until frothy; mix in melted chocolate, sugars, espresso powder (optional), and vanilla.

  5. Spread batter into the prepared pan and bake for 25–30 minutes. Cool before cutting.
