  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream
  • Fresh strawberries for decoration
  • Chocolate shavings for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until well blended.
  4. Gradually stir in boiling water until fully combined. The batter will be thin.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for about 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cakes to cool in pans for 10 minutes before transferring them to cooling racks.
  8. In a saucepan over medium heat, combine chopped strawberries and granulated sugar. Cook until strawberries are soft and juices are released (about 5 minutes).
  9. Stir in lemon juice and cornstarch mixture; cook until thickened.
  10. Heat cream in a saucepan until just simmering. Pour hot cream over chopped chocolate in a bowl; let sit for a few minutes before stirring until smooth.
  11. Place one layer of cake on a serving plate; spread strawberry filling over it. Top with second layer; pour ganache over top allowing it to drip down sides. Decorate with fresh strawberries and chocolate shavings as desired.
