  • 3 pounds strawberries (washed and hulled)
  • 3/4 cup sugar
  • 3/4 cup honey
  • 2 teaspoons vanilla extract
  • 1 teaspoon bottled lemon juice
  • 1/4 teaspoon salt

Instructions

  1. Prepare your canning setup by filling a large pot with water and heating four half-pint jars in simmering water.
  2. Puree the washed strawberries in a food processor until smooth.
  3. In a deep pot over medium heat, combine the strawberry puree, sugar, honey, lemon juice, vanilla extract, and salt.
  4. Bring to a boil while stirring frequently; then reduce heat and let it simmer for 60-90 minutes until thickened.
  5. Using jar lifters, fill hot jars with the mixture, leaving about 1/4 inch headspace. Remove air bubbles and wipe jar rims.
  6. Seal each jar with a lid and process in boiling water for 10 minutes.
  7. Allow jars to cool undisturbed for 12-24 hours before checking seals.
