Ingredients

Scale
  • 1 cup Unsalted Butter (or Coconut Oil for dairy-free)
  • 1 cup Brown Sugar (or Coconut Sugar)
  • 1/2 cup Granulated Sugar (or a sugar alternative)
  • 1 1/2 cups All-Purpose Flour (or Gluten-Free Flour Blend)
  • 2 cups Old-Fashioned Oats
  • 1 Large Egg (or Flax Egg for vegan option)
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Molasses (or Honey or Agave Syrup)
  • 1/2 cup Freeze-Dried Strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and sugars until light and fluffy. Mix in the egg (or flax egg) and vanilla extract, followed by molasses.
  3. In another bowl, whisk together flour, oats, baking soda, cinnamon, and salt. Gradually add this dry mix to the wet ingredients until just combined.
  4. Drop rounded tablespoons of dough onto the prepared baking sheet with space between each cookie.
  5. Bake for about 12 minutes or until edges are golden brown. Cool on the baking sheet before transferring to a cooling rack.
  6. For the icing, crush freeze-dried strawberries into powder and mix with powdered sugar and water until you achieve your desired consistency. Drizzle over cooled cookies.
