  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 1 box (3 oz) strawberry Jell-O
  • 1 cup boiling water
  • ½ cup cold water
  • 1 cup whipped topping
  • 1 cup chopped strawberries
  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 20 Golden Oreos, crushed
  • 4 tbsp unsalted butter, melted
  • 1 box (3 oz) strawberry Jell-O powder, dry

Instructions

  1. Preheat oven to 325°F (160°C).
  2. For the crust, mix graham cracker crumbs with melted butter and sugar; press firmly into a springform pan. Bake for 10 minutes and cool.
  3. In a bowl, beat cream cheese and sugar until smooth. Add sour cream and eggs one at a time; blend well. Pour over crust and bake for 45–50 minutes until slightly wobbly in the center.
  4. Dissolve Jell-O in boiling water, stir in cold water, then fold in whipped topping and chopped strawberries once thickened. Spread over cooled cheesecake.
  5. Whip heavy cream with powdered sugar until stiff peaks form; layer on top.
  6. Crush cookies mixed with melted butter and sprinkle as a topping.
