  • 2 pounds ground chicken
  • 3 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 tablespoon cumin
  • 4 cups chicken broth
  • 1 tablespoon chicken base (such as Better Than Bouillon)
  • A few dashes hot sauce of choice
  • 1 cup sour cream
  • 1 cup chopped cilantro
  • 3 tablespoons lime juice
  • More cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add diced onion, jalapeños, corn kernels, salt, and pepper. Sauté for 7-9 minutes until softened.
  2. Add minced garlic and ground chicken, stirring in chili powder, paprika, cumin, salt, and pepper. Cook for another 7-9 minutes until the chicken is browned.
  3. Pour in chicken broth and add chicken base; bring to a gentle boil. Reduce heat and simmer uncovered for 25-30 minutes until thickened.
  4. Stir in hot sauce, sour cream, cilantro, and lime juice; cook for an additional 5-10 minutes.
