  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 2 limes (1 for chicken marination, 1 for rice)
  • ¼ cup mayonnaise (or Greek yogurt)
  • ½ cup crumbled feta cheese
  • 2 tablespoons fresh cilantro (chopped)
  • Optional toppings: sliced jalapeño, diced avocado, lime wedges

Instructions

  1. Marinate the chicken by mixing olive oil, garlic powder, onion powder, cumin, chili powder, smoked paprika, salt, and pepper in a bowl. Coat the chicken thoroughly and refrigerate for 15 to 30 minutes.
  2. In a skillet over medium-high heat, add olive oil and cook corn kernels until charred (3 to 5 minutes). Combine charred corn with mayo (or Greek yogurt), feta cheese, chili powder, cilantro, and lime juice in a bowl.
  3. Cook the marinated chicken in a preheated skillet until golden brown on both sides (4 to 5 minutes per side).
