Ingredients
- 4 large Portobello mushrooms
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup chopped spinach
- ½ cup diced cherry tomatoes
- ¼ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a baking sheet.
- Brush mushrooms with olive oil and place them gill-side up on the baking sheet. Season with salt and pepper.
- In a pan, sauté garlic in olive oil until fragrant. Add spinach and cook until wilted.
- Remove from heat; mix in tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
- Stuff each mushroom cap with the filling and top with mozzarella cheese.
- Bake for 15–18 minutes until tender and cheese is bubbling.
- Serve warm garnished with fresh basil or parsley if desired.
