  • ½ cup celery (chopped)
  • ½ cup onion (chopped)
  • ½ cup carrots (chopped)
  • 1 tbsp fresh thyme
  • 1 tbsp fresh sage
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 cups bread flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp granulated sugar
  • ½ tsp salt
  • 1 ¼ cups buttermilk
  • 8 tbsp unsalted butter (melted then cooled)
  • 1 tsp fresh rosemary (chopped)

Instructions

  1. In a food processor, pulse together the chopped celery, onion, carrots, thyme, sage, salt, and black pepper until finely chopped.
  2. Heat olive oil in a skillet over medium heat. Add the vegetable mixture and cook for 10-12 minutes until soft. Remove from heat and let cool.
  3. Preheat your oven to 425°F (220°C).
  4. In a large mixing bowl, combine bread flour, baking powder, baking soda, sugar, and salt.
  5. In a separate bowl, whisk together buttermilk and 4 tbsp melted butter.
  6. Add the wet mixture to the dry ingredients and stir until a dough forms. Fold in the cooled vegetable mixture until evenly combined.
  7. Drop heaping spoonfuls of dough onto a baking sheet (about 12 biscuits) and bake for 12 minutes.
  8. While baking, mix remaining melted butter with chopped rosemary. After initial baking time, brush this mixture over the biscuits and return to the oven for an additional 6-8 minutes until golden brown.
  9. Serve warm with butter or as sliders filled with turkey leftovers.
