  • 2 tbsp pineapple juice
  • 1 cup pineapple chunks
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced

Instructions

  2. Heat vegetable oil in a large skillet over medium-high heat. Add coated chicken and cook until golden brown (5–7 minutes).
  3. In another bowl, whisk together ketchup, rice vinegar, soy sauce, sugar, pineapple juice, and cornstarch-water mixture until smooth.
  4. Add diced bell peppers and pineapple to the skillet with cooked chicken. Pour the sauce over everything, stirring well.
  5. Let simmer for an additional 5–7 minutes until the sauce thickens slightly. Serve hot over rice or as desired.
