  • 25 corn tortillas
  • 2 ½ cups shredded beef
  • ½ cup mashed potatoes
  • 1 medium tomato (diced)
  • 1 small onion (chopped)
  • 1 jalapeno pepper (chopped)
  • salt and pepper to taste
  • vegetable oil for frying

Instructions

  1. In a mixing bowl, combine shredded beef, mashed potatoes, diced tomato, chopped onion, jalapeno pepper, salt, and pepper. Mix well.
  2. Heat vegetable oil in a frying pan over medium heat until hot enough.
  3. Place about two tablespoons of filling into the center of each corn tortilla and fold it in half.
  4. Fry the tacos in batches for about 2–3 minutes on each side until golden brown and crispy.
  5. Drain excess oil on paper towels and serve hot with your choice of toppings like pickled onions, shredded lettuce, Mexican crema, and cheese.
