  • 4 cups chicken broth or stock
  • 2 cups half-and-half, warmed
  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried Italian herb blend
  • 1 pound gnocchi
  • 2 cups cooked rotisserie chicken breast, shredded or cubed
  • 2 cups fresh spinach, roughly chopped
  • 1/8 teaspoon freshly grated nutmeg (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot over medium heat, melt the butter and olive oil. Add diced onion, grated carrots, sliced celery, and minced garlic; sauté for 5 minutes until tender.
  2. Deglaze with dry white apple vinegar, scraping up any bits from the bottom.
  3. Stir in flour and cook for 1 minute to remove the raw taste.
  4. Gradually whisk in chicken broth and bring to a gentle simmer. Add warmed half-and-half, thyme leaves, and Italian herbs; stir well.
  5. Incorporate gnocchi and shredded rotisserie chicken; cook until gnocchi float to the top.
  6. Stir in chopped spinach until wilted. Season with salt, pepper, and optional nutmeg before serving.
