  • 1 can (28 ounces) diced fire-roasted tomatoes
  • 2 cups low sodium beef broth

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add ground beef, season with salt and pepper, and brown while breaking it up with a wooden spoon.
  2. Stir in onions, bell pepper, and garlic; cook until softened.
  3. Add chili powder, cumin, oregano, and smoked paprika; mix in tomato paste and cook for another 3 minutes.
  4. Pour in fire-roasted tomatoes and beef broth; scrape browned bits from the pot.
  5. Add a bay leaf, bring to simmer, reduce heat, and cook for 25-30 minutes.
  6. Remove bay leaf; adjust seasoning if necessary before serving hot with desired toppings.
