  • 1 cup bread crumbs
  • 1 onion, chopped
  • 2 pounds lean ground chicken
  • ½ cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon tomato paste
  • 2 teaspoons minced garlic
  • ½ cup ketchup
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large loaf pan with nonstick spray.
  2. In a mixing bowl, combine eggs, bread crumbs, chopped onion, ground chicken, milk, salt, pepper, Worcestershire sauce, Dijon mustard, tomato paste, minced garlic, and garlic powder. Mix until well combined.
  3. Shape the mixture into a loaf and place it in the loaf pan.
  4. For the sauce, mix ketchup, brown sugar, and Worcestershire sauce in a saucepan over medium heat until boiling; simmer for 2-3 minutes.
  5. Pour half of the sauce over the meatloaf and bake for 30 minutes.
  6. After 30 minutes, add the remaining sauce on top and bake for an additional 45 minutes or until the internal temperature reaches 160°F (70°C).
  7. Allow to rest for 10 minutes before slicing.
