- 1/2 ounce pectin
- 12 ounces sugar (divided)
- 3 ounces clear corn syrup (or glucose)
- 1 1/2 teaspoons liquid citric acid
- 1 teaspoon vanilla bean paste
Instructions
- Prepare your fruit puree by blending peeled peaches until smooth.
- Line an 8×8 square pan with cling wrap for easy removal.
- In a bowl, combine 4 ounces of sugar with pectin.
- In a saucepan, bring the fruit puree to a boil and whisk in the sugar/pectin mixture.
- Gradually add the remaining sugar and corn syrup/glucose while cooking until it reaches 225°F.
- Remove from heat and stir in citric acid and vanilla bean paste.
- Pour into the prepared pan and let sit at room temperature for about 90 minutes to set.
- Once firm, turn out onto a sugared surface, cut into pieces, and roll edges in sugar for added sweetness.
