  • 1 pound fruit puree (peach or any preferred fruit)
  • 1/2 ounce pectin
  • 12 ounces sugar (divided)
  • 3 ounces clear corn syrup (or glucose)
  • 1 1/2 teaspoons liquid citric acid
  • 1 teaspoon vanilla bean paste

Instructions

  1. Prepare your fruit puree by blending peeled peaches until smooth.
  2. Line an 8×8 square pan with cling wrap for easy removal.
  3. In a bowl, combine 4 ounces of sugar with pectin.
  4. In a saucepan, bring the fruit puree to a boil and whisk in the sugar/pectin mixture.
  5. Gradually add the remaining sugar and corn syrup/glucose while cooking until it reaches 225°F.
  6. Remove from heat and stir in citric acid and vanilla bean paste.
  7. Pour into the prepared pan and let sit at room temperature for about 90 minutes to set.
  8. Once firm, turn out onto a sugared surface, cut into pieces, and roll edges in sugar for added sweetness.
