  • 1 green bell pepper, diced

  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 23 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste

Instructions

  1. Heat a large pot over medium heat. Sauté diced onion and green bell pepper for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Increase heat slightly and add ground beef (or turkey). Cook until browned, breaking it apart for even texture.
  3. Stir in diced tomatoes with juices, tomato sauce, and beef broth; mix well.
  4. Add chili powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper; stir thoroughly.
  5. Fold in kidney beans and pinto beans. Simmer on low heat for about 30 minutes to meld flavors.
  6. Serve hot with optional toppings like shredded cheese or avocado slices.
