- 2 lbs ground beef (or ground turkey)
- 1 small onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2–3 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
Instructions
- Heat a large pot over medium heat. Sauté diced onion and green bell pepper for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
- Increase heat slightly and add ground beef (or turkey). Cook until browned, breaking it apart for even texture.
- Stir in diced tomatoes with juices, tomato sauce, and beef broth; mix well.
- Add chili powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper; stir thoroughly.
- Fold in kidney beans and pinto beans. Simmer on low heat for about 30 minutes to meld flavors.
- Serve hot with optional toppings like shredded cheese or avocado slices.
