Ingredients

  • 1 lb boneless skinless chicken breast
  • 6 cups baby spinach
  • 2 ripe peaches, halved
  • ½ cup blueberries
  • ¼ cup sliced red onion
  • ¼ cup pecan halves
  • 1 oz crumbled goat cheese
  • 1 tablespoon coarse ground mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt & pepper to taste
  • 1 teaspoon grape seed oil (or avocado/canola oil)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper. Brush peach halves lightly with grape seed oil.
  3. Grill the chicken for 5-7 minutes per side until fully cooked. During the last few minutes, grill the peaches flesh-side down until charred.
  4. Remove from the grill and let rest before slicing.
  5. In a large bowl, combine baby spinach, blueberries, sliced onion, pecans, and goat cheese. Add sliced chicken and peaches on top.
  6. Drizzle with honey mustard dressing before serving.
