- 1 lb boneless skinless chicken breast
- 6 cups baby spinach
- 2 ripe peaches, halved
- ½ cup blueberries
- ¼ cup sliced red onion
- ¼ cup pecan halves
- 1 oz crumbled goat cheese
- 1 tablespoon coarse ground mustard
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- Salt & pepper to taste
- 1 teaspoon grape seed oil (or avocado/canola oil)
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt and pepper. Brush peach halves lightly with grape seed oil.
- Grill the chicken for 5-7 minutes per side until fully cooked. During the last few minutes, grill the peaches flesh-side down until charred.
- Remove from the grill and let rest before slicing.
- In a large bowl, combine baby spinach, blueberries, sliced onion, pecans, and goat cheese. Add sliced chicken and peaches on top.
- Drizzle with honey mustard dressing before serving.
