  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, add a splash of olive oil and sauté the shrimp until pink and opaque (about 3-4 minutes per side). Remove from heat and let cool.
  2. While shrimp cools, chop avocados into cubes, halve cherry tomatoes, and finely chop red onion.
  3. In a large bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, lime juice, olive oil, salt, and pepper. Toss gently.
  4. Once shrimp has cooled slightly, fold it into the salsa mixture without mashing the avocados.
  5. Cover with plastic wrap and refrigerate for at least 30 minutes before serving to allow flavors to meld.
