- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved

- Salt and pepper to taste
Instructions
- In a skillet over medium heat, add a splash of olive oil and sauté the shrimp until pink and opaque (about 3-4 minutes per side). Remove from heat and let cool.
- While shrimp cools, chop avocados into cubes, halve cherry tomatoes, and finely chop red onion.
- In a large bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, lime juice, olive oil, salt, and pepper. Toss gently.
- Once shrimp has cooled slightly, fold it into the salsa mixture without mashing the avocados.
