Ingredients
- 2 medium zucchinis, sliced
- 1 can (400g) chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a mixing bowl, combine sliced zucchinis, chickpeas, bell pepper, and onion. Drizzle with olive oil and season with oregano, smoked paprika, salt, and pepper. Mix well.
- Spread the vegetable mixture evenly on the prepared baking sheet and roast for 25-30 minutes. Toss halfway through until tender and golden brown.
