- 1 cup crumbled feta cheese (plus extra for topping)

- 1 tbsp olive oil
- 2 medium zucchinis, thinly sliced
- 3 large eggs
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and slice the zucchinis into thin rounds. Place in a colander, sprinkle with salt, and let sit for 10 minutes to draw out excess moisture.
- In a mixing bowl, combine crumbled feta cheese, chopped dill, olive oil, eggs, salt, and pepper. Whisk until smooth.
