  • 1 cup crumbled feta cheese (plus extra for topping)
  • 2 tbsp chopped fresh dill
  • 1 tbsp olive oil
  • 2 medium zucchinis, thinly sliced
  • 3 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the zucchinis into thin rounds. Place in a colander, sprinkle with salt, and let sit for 10 minutes to draw out excess moisture.
  3. In a mixing bowl, combine crumbled feta cheese, chopped dill, olive oil, eggs, salt, and pepper. Whisk until smooth.
  4. In a prepared baking dish, layer half of the zucchini slices at the bottom. Spread half of the cheese mixture over the zucchini. Repeat with remaining zucchini and cheese mixture.
  5. Bake in the preheated oven for 30-35 minutes or until golden brown on top and set in the center.
  6. Remove from oven and let cool slightly before serving. Top with extra feta if desired.
