  • 1 cup fresh strawberries, chopped
  • 1/2 cup sugar
  • 8 oz cream cheese, softened
  • 1 cup whipped cream
  • 1/2 teaspoon vanilla extract
  • 1 cup prepared blue raspberry vegan gelatin (follow package instructions)
  • 1/2 cup cold water

Instructions

  1. For the strawberry layer, mix chopped strawberries and sugar in a bowl; let sit for 10 minutes.
  2. In another bowl, beat softened cream cheese and vanilla until smooth. Gently fold in whipped cream.

  5. Pour prepared blue raspberry vegan gelatin on top and refrigerate for at least 3 hours until set.
